Weekly Jackson.

 At Target. We usually go once a week and he gets to run around the toys (if we have time).
Monday - Having a deep conversation with Sophie.
Tuesday- This kid has THE BEST bathtimes...see below.
 Working on teeth brushing.
Wednesday- Cake pop aftermath.
Thursday- He had the best day on Thursday last week. He was SUCH a good boy all day! So proud!
 We sent this to family for a late Valentine's Day.
Friday- I got a little crazy and decided that 4 colorful bowls in the bathtub was a grand idea. 
It really was. He had a super awesome bathtime and I had a huge load of towels to wash.
Saturday- We went to the bookstore right when it opened. Jack surprised up so fully that we stopped in our tracks. He was running around the corner and almost ran into someone and said "scuse me." I literally stopped chasing him and stood there with my mouth wide. He was polite!! And I didn't have to coach him!! Omg. My kid is a genius.  :]

In January, Jeremy and I went to a Mutemath show in Dallas.  It was...


It was beyond what I had hoped for. It was just epic. 
We spend most of Saturday in Dallas. 

 Liberty Burger in Dallas has THE BEST MILKSHAKES ever.
Salted Caramel. Yes.
 We stayed at a pretty great little hotel.

I was really excited to meet him! I actually had to ask the guys of Canon Blue to find him for me. Ha! It was a little embarrassing because I just rambled on and on talking about his beautiful wife and all their friends that I love! Ah well. It was fun and he's so nice!

We had an amazing time! I can't wait to see them again!

Obsessing over... Jack's new love of his mama. I mean, he loves me... but recently he LOVES me! He hate when I go to the restroom or when I walk out. He's also waking up in the middle of the night and snuggling up with me in our bed. We don't have a big bed, so it sometimes pushes Jeremy to the couch. I hate that, but I can't ever get Jack back to his bed without waking him up. Anyway, I'm loving it. Ha.
Also, a lot of work stuff and the new Hipstamatic disposable app and the Clear app. Yay iPhone!
Working on... recipes for work, a colorful chevron blanket, a black and white chevron blanket, and getting ready for my family to be here for a short weekend trip this coming weekend. My niece is a dancer and has a competition in Dallas. 

Thinking about... taxes. Ugh. I hate tax season.

Anticipating... Jack has a "sick" appointment on Wednesday. He has been a little congested this last week and he can't shake it. Just want to see what his amazing doctor says can help. And Friday. I can't wait for Friday. I finally get to see my mom, my sister-in-law, and nieces.

Listening to... The Naked and Famous, Real Estate, Mutemath, and Gotye.

Eating... Honeycrisp apples and peanut butter and wishing I had some taro milk bubble tea.

Wishing... it was Friday and I had a million dollars.

Quiche // Recipe

I really like making quiches. They are a great way to clean out the fridge if you have a lot of fresh vegetables. They work well with frozen vegetables too.

We usually have a lot of veggies in the fridge, but we tend to never use them all. 
I decided that I wasn't going to let that happen.. ever again. 

Ok ok. I lied. I just planned to make a quiche and happened to buy a pie crust that week. 

Here's what I did....

Pepper, onion, mushroom, and cheddar quiche

1 1/2 cups peppers, chopped
1/2 onion, chopped
2 cups mushrooms, chopped
1 cup cheddar cheese, shredded
6-8 eggs
2-3 tablespoons flour
1-1 1/2 cups cream or milk
frozen pie crust

Saute the onions, peppers, and mushrooms in a little bit of olive oil or butter until they are soft. Cool them down.
In a blender or with a whisk, beat the eggs, milk, and flour together. Don't forget to season the egg mixture. It's the only chance you'll get.
In the bottom of the pie crust, put all the pepper mixture then sprinkle with some cheese.
Then add the egg mixture until it fills the entire pie crust. 
Sprinkle with cheese.
Bake at 350 degrees for about 20-30 minutes or until the middle of the quiche springs back when touched.

*Tip: I always place the pie crust pan on a sheet tray in case of overflow.

Love day.

We didn't do much for Valentine's Day. I did make some cute decorations that are going to make me sad when I take them down tomorrow.

I'll post what we did soon. I've been so tired lately. I probably need to head to a checkup soon. It's only nine and I'm so beyond ready for bed. Ha! Old lady alert.

We have been cleaning and dusting all day and now I can't breathe. So we're off to escape to my mother-in-law's house and watch the Super Bowl. I'm not watching the game per say... just the commercials.
