Pumpkin Chocolate Chip Muffins // Recipe

Another autumn recipe! 
I love pumpkin pastries. 
Add in some chocolate chips and you've got yourself a gooooood muffin!!

Pumpkin Chocolate Chip Muffins

1 cup brown sugar
1/4 cup vegetable oil
2 eggs
1 cup pumpkin puree
2-3 tablespoons water
1 1/2 cup whole wheat flour
1 tablespoon baking powder
1 teaspoon baking soda
1/2 tablespoon cinnamon
1/2 teaspoon nutmeg
1/4 teaspoon salt
1 cup semi-sweet chocolate chips

Preheat the oven to 400 degrees. Line your muffin tin with paper liners.
Mix sugar, oil, eggs. Add pumpkin and water. 
In a separate bowl, mix together the dry ingredients.
Add the wet mixture, and stir in the chocolate chips.
Fill the muffin tins 2/3 full and bake for 20-25 minutes.

So yummy!

YUM!!! I have a couple cans of organic pumpkin puree... I've been thinking of baking cookies, but perhaps I could justify muffins because they're "healthy!"
